Try This Nutrient Packed Pumpkin Soup

Crisp weather, yellow and orange leaves, an extra layer of clothing, pumpkin spice lattes, Fall is here.  

We all experience profound shifts as we move through the year, and we adjust to the new  seasons. Mother Nature’s creatures begin to change, including the medicine we nourish our  body with. Food.  

In season, Ritucharya, adapting our bodies to the weather, wisdom of nature. Beautiful ways to  speak on behalf of Nature’s best medicine.  

As produce begins to come into season, think more nutrients for your body, more affordable,  more flavor, supporting local farmers, better for the environment- flowing with the natural  world.  

I am sharing a nutrient PACKED dish that is perfect for a movie night in, or what you’ll be  bringing to Thanksgiving this year. 

Pumpkin soup for the win! 

 

INGREDIENTS

  • 1 butternut squash (cubbed)

  • 1 can of pumpkin purée (15oz)

  • 1/2 head of  cauliflower (florets)

  • 1/4 cup Extra Virgin Olive Oil

  • 5 cloves garlic (minced)

  • 1 yellow onion  (diced)

  • 1 tbsp. turmeric

  • 1 tbsp. cumin

  • 5 cups vegetable broth (can be made from simmering  your produce scraps in water for 24 hours)

  • 1 can coconut milk (full fat)

  • salt & pepper for taste

  • 1 tsp. red pepper flakes

  • Green onions for topping (optional)

TOOLS

  • Large pot with lid

  • Large wooden spoon

  • Cutting board

  • Chef knife

  • High-speed blender⁣ and a hungry appetite.  

DIRECTIONS

On medium high, sauté diced yellow onion and garlic in 4 tbsp. EVOO (3/5 min). Add  spices- turmeric, cumin, red pepper flakes, salt, pepper (let simmer for additional 4/5 minutes).  Add 5 cups vegetable broth, 3/4 can coconut milk, butternut squash, pumpkin pure and  cauliflower. Bring to a boil before simmering for 25 minutes. Take soup off heat, cool before  transferring to a high speed blender. Pour into bowl and garnish with coconut milk, Extra Virgin  Olive Oil and green onions.
