Quick & Easy Pumpkin Squares

Do you love pumpkin flavor but lack the time (and confidence) to pull off a fancy pumpkin baking session? Have no fear, these Pumpkin Squares derived from the Trader Joe’s Pumpkin Break Mix is the way to go.

Ingredients

PUMPKIN SQUARES

1 Trader Joe’s pumpkin bread mix

1/2c canned pumpkin

2/3c sugar

2 large eggs

2tbsp water

MAPLE GLAZE

3/4c powdered sugar

1tsp maple extract (or sub vanilla extra for vanilla glaze)

2tbsp almond milk

Directions

1. Preheat oven at 350.

2. Prepare 9x9 baking pan with parchment paper or oil.

3. Combine all ingredients. Batter should be sticky.

4. Bake for 30-35mins. Remove when tester stick is clean and top slight browned. Cool squares.

5. Mix your icing ingredients together. Slowly add in the almond milk! (You might need more, might need less)

6. When you get the glaze at your desired consistency, pour over pumpkin squares.
